Cornbread and "Beef" Skillet Pie

Great news! I woke up this morning and my eye didn't feel "pressured." Ever since lasik last Friday I've felt a pressure coming from the retina but this morning it was gone. Last night it was itching A TON but I guess it was the calm before the storm because that's gone now too! Asides from the constant dryness my eye feels back to normal :D

Cornbread and "Beef" Skillet Pie

1lb ground beef (I used turkey as usual)
21oz can of Ranchero beans (I had to make my own)
12-25oz can of corn
6.5oz package of cornbread mix
1/2 cup shredded pepperjack cheese

Look at the brownies in the background. Mmmm
1. Pre-heat to 400 degrees
2. Brown meat
3. Add beans and corn. Simmer 2 minutes
4. Prepare your cornbread mix
5. Spoon cornbread mix over meat/beans/veggies
6. Sprinkle cheese on top (I'm skipping this next time)
7. Bake 15 minutes, cool for 5

This was the first dish I made post-lasik when I was craving comfort food. Unfortunately I'd committed to it before realizing no one nearby sold ranchero beans. I'm a sucky Token Spanish Person. Turns out ranchero beans are their own separate recipe! I didn't save the recipe but the main ingredients were pinto beans, diced tomatoes, onion, cumin, salt, pepper and hot sauce.

According to this guide the pig doesn't even need to be butchered!
The internet kept demanding I add bacon but that's needless fat (and I'm out). Speaking of fat, the cheese in this recipe was just of a distraction. It may be the only recipe I ever omit the cheese from in the future. *GASP*

I may also double the amount of cornbread topping in the future. I made this in my 12" pan because it has a lid (for leftovers) and it barely covered the meat/veggies but was soooooooooooooo good!
